Danza is made by the Champenoise method with base wine from a selected harvest which ensures the optimum balance between acidity and alcohol content, hence making the albariño varietal to express its essence.

In the traditional method the secondary fermentation is carried out in individual bottles, and a subsequent ageing on lees for 21 months until the disgorgement date. This long ageing provides complex aromas, roundness and fine bubbles perfectly integrated.
